The Gyuto knife was originally designed for slicing meat, hence its literal meaning, "beef knife". Gyuto kitchen knives are considered Japanese chef's knives because their blade shape, long and tapered with a sharp point, closely resembles that of a Western chef's knife. The one difference is that Japanese Gyuto knives have a slightly narrower edge angle than chef's knives.
Just like their European counterparts, they are highly versatile, making it easy to cut vegetables, meat or fish.
