On one hand, its blade brings all the originality, with a light hammered finish that gives each blade a refined, unique design. On the other hand, the handle is more traditional, made of oak wood to bring a classic style to the knife.
Looking more closely at the makeup of Yoshi G3 Japanese knives, we find a blade with a Ginsan steel core, with a carbon content of 0.95%, giving it a harder, more rigid edge to keep a good cutting ability over time. This core is then wrapped in a layer of stainless steel to add protection to the blade. This is called San Mai, meaning the blade is built with 3 alternating layers of steel.
The difference between alloys can be seen at the bottom of the blade, where a small wave forms. A blade like this has a hardness of around 59 to 60 HRC on the Rockwell scale, making it easy to sharpen with a whetstone.
The oak wood has undergone a smoking process that brings out its grain, giving more character to the kitchen knife. Where the blade meets the handle, wood filler has been added, allowing for better hygiene and a better seal on the knife.
