Yaketa VG10 Damascus Handcrafted Japanese Chef's Knife 20cm
Description
Description
A versatile kitchen blade
The Wusaki Yaketa VG10 chef's knife has the most versatile blade among all our kitchen knives. Its 20cm blade is just as effective on vegetables, fruit, herbs, meat and fish. Got a recipe to prepare? This is the knife you'll reach for first to get started.
Damascus blade with a long-lasting edge
The blade shows off a splendid damascus pattern. This manufacturing technique involves a core made of Japanese VG10 steel, a hard alloy synonymous with a razor-sharp edge. Around this rigid core, a multitude of layers of a softer alloy have been added. They wrap around the cutting edge to protect the blade against shocks, flexing and impacts. The result is a blade that's fearsomely sharp, yet also resilient!
Hammering and an octagonal handle
The upper part of the blade, meanwhile, benefits from hammering, which produces the small dimples you notice at first glance. These dimples aren't just for looks, since they create tiny air pockets that keep food from sticking while you cut. Your comfort in use is therefore improved! You'll also enjoy an octagonal oak handle. Ergonomic in the hand and sturdy, it has been burnt at the lower end to boost its rigidity and elegance.
A traditional handcrafted knife
This Yaketa VG10 Japanese chef's knife is designed in Japan by the Tsunehisa cutlery workshop, which draws on the full breadth of Wusaki's expertise and know-how to bring you high-performing, stylish knives.

Care & sharpening
Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
