Discover all the kitchen knives from the Wusaki Nogami BS2 range on this page. These Japanese knives are made by the renowned Tadafusa cutlery house and come in several models, letting you vary your cuts. You could choose, for example, from a chef's knife, a nakiri knife, a santoku knife...So you can easily vary your recipes.
The blade of the Wusaki Nogami BS2 knife is made of Japanese steel, Blue Steel n°2. It's a quality steel with clear advantages. For instance, its carbon content far exceeds the average found in cutlery, letting it reach a hardness of 62/63 HRC on the Rockwell scale. This very high rating lets the blade hold its edge over the long term, while staying easy to sharpen whenever you need to. A blade with high rigidity can also be sharpened more finely. So you get a razor-sharp edge, making your cuts easier from the very first use.
This core is then wrapped in a folded layer of stainless steel. It protects the core, since carbon steel is prone to corrosion. This stack of 3 layers has a name: the San Mai process. You'll also notice the knife has a raw finish on the upper part of the blade: it's called Nashiji.
It's still worth noting that a knife with such a carbon-rich steel needs careful maintenance. It should be hand-washed, and dried after washing to avoid leaving any moisture behind.
Each Nogami BS2 knife features a walnut wood handle. This distinctive species is prized for its resistance to humidity and heat. You can admire the wood grain, which is of course unique on every handle. Its shape feels good in hand and suits every cook. Its stainless steel bolster ties in with the blade.
So choose these knives, Wusaki Nogami BS2, with their very traditional design, entirely made in Japan! In doing so, you're choosing good-looking, high-performing knives to accompany you every day.
