The Yaketa AUS10 series awaits you on Wusaki.com! This range brings together a total of seven high-end Japanese knives: three chef's knives, a santoku knife, a sujihiki knife, a bunka knife and a nakiri knife. The blades are made of AUS10 stainless steel, a Japanese alloy with a 1.05% carbon content. This particularly high carbon level gives the blade increased hardness, reaching 60 HRC on the Rockwell scale. AUS10 is a steel that offers lasting, consistent cutting performance, which in turn reduces how often you need to sharpen it.
These Japanese kitchen knives feature remarkable Damascus work. The AUS10 blades are wrapped in several layers of less rigid steel. Each blade therefore has a very hard core, ensuring a razor-sharp edge that lasts over time, and protective layers that give it greater resistance against knocks and impacts. These Japanese Wusaki knives thus combine the benefits of the two alloys they're made from: a very rigid core guaranteeing lasting performance, and a softer protective structure that works to shield the cutting edge against physical stress. Beyond reinforcing the strength of the edge and blade, the Damascus pattern gives the knives a particularly elegant, distinguished look.
At the end of production, the blades receive two finishing treatments. The first is hammering carried out along the entire length of the blade, creating small dimples. These are deliberately produced so that food doesn't stick to the blade as you cut. Beyond their aesthetic appeal, the dimples make cutting more comfortable. The second is a mirror polish that enhances the steel's shine while protecting it from oxidation.
You'll also find an oak wood handle, a type of wood known for its extreme resistance. Widely used in furniture making, oak doesn't fear knocks, warping or humidity. True to its reputation, oak also adds visual value to the handle. Note that the end of the handle has been scorched, to enhance the wood's sturdiness while deepening its tones. The handle has a total of eight facets and ensures a comfortable grip even during prolonged use of your handcrafted Japanese knife.
Want to equip yourself with a traditional Japanese knife featuring a beautiful Damascus blade? The Wusaki Yaketa AUS10 series is exactly what you need!
