A piece steeped in tradition
The Wusaki Nakata Erable BS2 21cm chef's knife is made entirely in Japan by the renowned Tadafusa cutlery workshop, based in Sanjo (Niigata), a town celebrated for its long tradition of craftsmanship. The blade is meticulously shaped by hand, following techniques inspired by the centuries-old methods of blacksmiths of old. Style and performance both fully deliver!
A rare, high-performance alloy
Made from Japanese Blue Steel n°2, our chef's knife has plenty going for it. This alloy, enriched with carbon (1.2%), is known for its outstanding rigidity (62-63 HRC). Thanks to this, its blade keeps its edge for a long time, delivering lasting cutting performance. Use after use, the blade stays effective, giving remarkable cutting results. What's more, this steel proves easy to sharpen, saving you time despite its rigidity. Finally, it's wrapped in stainless steel, forming a barrier against corrosion.
A dense maple handle
Fitted with a maple wood handle, the Wusaki Nakata Erable BS2 chef's knife offers exceptional resistance. This wood, known for its density, can withstand impact, moisture and wear. Suited to daily use, maple is a reliable choice for long-term durability. What's more, the grain pattern varies on every single knife!
High-quality finishing
The outer stainless steel layer has an exceptional Nashiji finish, giving each knife its own character.
The blade is then sharpened by a professional on a water stone, at a different but very pronounced angle, making cutting even easier.
The knife is not only a pleasure to hold and use, but also a pleasure to look at. It will quickly become a staple in your kitchen.
We recommend hand-washing it and drying it with a microfiber cloth to avoid unsightly moisture marks, then storing it somewhere dry. It's important never to let the handle get too wet, even when washing it. Note that the area near the cutting edge may gradually turn a dark blue shade even with proper care, due to the steel's reactivity. However, this poses no danger.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
