This very high rating lets the blade hold its edge for a long time, while staying easy to sharpen whenever needed. A blade with high hardness can also be sharpened more finely. This core is then wrapped in a folded layer of stainless steel. It protects the core, since carbon steel is prone to corrosion. This stack of 3 layers has a name: San Mai.
