This set includes 3 Wusaki Damascus 10Cr knives: 1 chef's knife 20cm, 1 utility knife 12cm and 1 paring knife 9cm. They are as good-looking as they are capable. An edge that holds up over time
Made from 10Cr steel and hand-polished to a razor-sharp finish, the blade of our kitchen knives holds its edge 2 to 3 times longer than a European steel blade. Every one of our knives gets a manual V-shaped sharpening on a leather strop, for a perfect cut from the very first use!

The Damascus 10Cr knives in this set have a steel blade with a hardness of 60 HRC and a 10Cr steel core (1% carbon). This high-grade Japanese steel is far harder than most premium Western knives. We chose this steel for its outstanding properties and unmatched longevity.
An original, refined design
The blade of the DAMASCUS 10Cr knives is made up of 67 layers of Damascus (unique to every knife), along with hammering across their entire upper section. The noble olive wood handle matters just as much as the blade: original grain, a stunning design and guaranteed comfort. Finally, the Japanese character engraved on the butt of the handle adds a further touch of prestige and a truly original style to your knives.
Wusaki knives come out of a small workshop just north of Canton, capital of China's Guangdong province in the west of the country. That region has long been known for its skill in steel knife-making. Good relations between France and China let us find a serious, human-scale partner, much like our own team. Every step of Wusaki's craft follows the French manufacturing standards set for professionals in the trade. Every handle is unique: colors, grain and pattern shift with the section of wood each one is cut from. Some areas come out darker than others — often because of a knot in the wood. That's entirely normal, not a flaw.
Wash by hand, then dry with a soft cloth. Never let the handle get too wet, even when washing it. You can occasionally wipe the handle with a cloth soaked in olive oil to help protect the wood.
Because of how deep the hammering runs and how heavy the knives are, the Damascus 10Cr olive wood range cannot be used with magnetic strips. We recommend storing them in a knife block or a case instead.

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
