Description
Description
The chef's knife: an essential!
For any cook, the Wusaki Fujiko Black 10Cr chef's knife is by far the most frequently used tool in the kitchen! Its long blade is perfect for cutting all kinds of food: meat (boneless), fish, vegetables, fruit, aromatic herbs... This versatile knife accompanies you through all your everyday recipes for slicing, chopping, mincing and dicing.
A blade with remarkable "San Mai" construction
The knife has a blade known as "San Mai", a reference to its distinctive construction. This manufacturing process, which originated in Japan, uses a rigid steel core wrapped on each side by a layer of softer steel. This core is made of 10Cr15CoMoV stainless steel, an alloy that's especially hard thanks to its high carbon content (1.05%). This hardness translates into a sharp edge and exemplary performance. The two layers of softer steel clamping the core in place also act as a shield against knocks and impacts.
A sturdy, elegant and comfortable handle
The handle is designed with optimal comfort in mind. It's made from black pakka wood, a material resistant to humidity and knocks, produced by hot-pressing laminated wood and resin together. With its ergonomic, rounded shape, the handle fits easily into the palm of your hand. Several elegant finishing touches complete it: a stainless steel bolster, a mosaic rivet, two red edgings and a base engraved with the Japanese kanji for "Tiger"!
Professional quality and expertise
The use of several materials, together with meticulous finishing, gives this Fujiko Black 10Cr knife a style all its own.
Fujiko Black 10cr knives are made in Guangdong, a province of western China. This region has been the country's historic center of cutlery for decades. The trusted relationship between France and China helped us team up with a small, human-scale workshop, much like our own. Every design step draws on Wusaki's full expertise and follows standards set by French professionals. We take pride in having created a high-performing piece, beautifully finished and offered at an affordable price for our customers.

Care & sharpening
Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
