An ultra-effective model
The Wusaki Yoshi G3 sujihiki knife 24cm is made by the Tsunehisa forge in Japan. This model is especially handy for cutting beautiful thin slices of meat and fish, thanks to its long blade that lets you make cuts in a single, precise motion. It's the Japanese slicing knife.
A typically Japanese San Maï blade
The Yoshi knife is built on a San Maï structure (3 alternating layers): it has a Ginsan steel core with 0.95% carbon, so the wire is stiffer. The Ginsan core is surrounded by a layer of stainless steel, hence the 3 layers. On the Rockwell scale, this steel reaches 59/60 HRC, striking a fine balance between easy sharpening and good edge retention. The difference between the steels shows at the bottom of the blade, thanks to a small wave.
A remarkable oak wood handle
This handcrafted Japanese knife sports a smoked oak handle, a wood resistant to impact, vibration and moisture. The baikoku oak goes through a smoking process, giving it a dark shade that amplifies its natural grain and authentic look. This eight-sided handle guarantees an ergonomic grip whether you're left- or right-handed. The wood filler between the handle and the blade ensures optimal watertightness, keeping small food residue and water from getting inside.
A flawless finish
The blade has an original hammered finish, revealing pretty pitted patterns like drops of water splashing across the cutting surface. Finally, kanji have been discreetly engraved, adding even more authenticity to the knife.
Wash your knife by hand, taking care not to run too much water over the handle, then use a soft cloth to dry it before storing it.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
