The Wusaki Yoshi G3 Japanese chef's knife 24cm is made in Japan by the Tsunehisa cutlery workshop. It offers plenty of advantages: sharp performance and a comfortable grip, all with great style. The chef's knife is the ultimate all-purpose knife! Designed to be highly practical, it's considered a must-have among kitchen knives. Quality steel for an effective cutting edge
Built on a San Maï structure, the blade is made of 3 alternating layers of steel. At its center is a core of Ginsan steel, a Japanese steel with a carbon content of 0.95%, making the wire stiffer for a long-lasting cutting edge. This Ginsan steel core is then surrounded by a layer of stainless steel, adding extra protection and suppleness. Note that this difference in steel can be seen at the bottom of the blade, thanks to a small wave. Its hardness is 59/60 HRC on the Rockwell scale: easy to sharpen with excellent edge retention!
Smoked oak for an outstanding handle
This Wusaki Japanese knife stands out for its smoked oak handle, a wood known for its resistance to shock, vibration and moisture. The baikoku oak is smoke-treated, giving it its unique dark shade. This coloring highlights the character and authenticity of its natural grain. The octagonal handle offers a comfortable grip, whether you're right- or left-handed. The wood filler used between the handle and the blade guarantees optimal watertightness, acting as a barrier against water and food residue.
A truly authentic design
The blade of this handcrafted Japanese knife has been lightly hammered, revealing pitted patterns that look like drops of water splashing onto the cutting surface. This finish makes every piece unique. Finally, kanji have been discreetly engraved for even more authenticity.
Wash your knife by hand, taking care not to run too much water over the handle, then use a soft cloth to dry it before storing it.

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
