The Wusaki Yoshi G3 santoku knife 16.5cm is made by the Tsunehisa forge in Japan. It's a real kitchen ally for cutting, slicing and chopping your vegetables, meats and fish. It's every bit as versatile as a chef's knife. It's prized for its cutting performance and its flawless look. It will find its place in your kitchen effortlessly!
Quality steel
The Yoshi knife has a core of Ginsan steel with 0.95% carbon, making the edge harder and more rigid. The Ginsan core is wrapped in a layer of stainless steel. As a result, the blade's structure is described as San Maï, since it's built on 3 alternating layers of steel. On the Rockwell scale, this steel reaches 59/60 HRC, giving it both good edge retention and easy sharpening. The difference between the steels is visible near the bottom of the blade, thanks to a small wave line.
A stunning oak handle
This handcrafted Japanese knife has a handle made of smoked oak, a wood resistant to impact, vibration and moisture. The baikoku oak undergoes a smoking process that gives it its dark hue. This brings out the character and authenticity of its natural grain. The octagonal handle gives you a comfortable grip, whether you're right- or left-handed. The wood paste added between the handle and the blade guarantees a complete seal, keeping water and food residue from getting inside.
A flawless finish
The blade has an original hammered finish, revealing pretty pitted patterns like droplets of water splashing across the cutting surface. Kanji are engraved on the blade to add a touch of authenticity to the knife. Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
