Remarkable craftsmanship
The Wusaki Yoshi G3 Japanese chef's knife 21.5cm is made by the Tsunehisa cutlery workshop in Japan. It offers plenty of advantages: excellent performance and a great grip, all while looking flawless. As a chef's knife, it's versatile enough for every kind of cut. There's no need to wait to equip yourself with this useful, good-looking knife of Japanese quality.
A formidable, long-lasting edge
Built on a San Maï base, the blade has 3 alternating layers of steel. At its center is a Ginsan steel core, a Japanese steel with a carbon content of 0.95%, making the edge harder and more rigid for a long-lasting cutting edge. This core is then wrapped in a layer of stainless steel for extra protection and better suppleness. The difference between the steels is visible near the bottom of the blade, thanks to a small wave line. The hardness is 59/60 HRC on the Rockwell scale, making it easy to sharpen while keeping a good hold on its edge.
A handle of noble oak
This Japanese knife has a handle made of smoked oak, a wood resistant to impact, vibration and moisture. The baikoku oak undergoes a smoking process and takes on a dark hue that brings out its natural grain and authentic look. This octagonal handle gives an ergonomic grip suited to left- and right-handers alike. Wood paste fills the space between the handle and the blade, sealing it completely and keeping food residue and water from getting inside.
An authentic, refined design
The blade of this knife has been hammered, revealing pitted patterns that look like droplets of water splashing across the cutting surface. Every piece is therefore unique! Finally, kanji have been discreetly engraved, adding even more authenticity to the knife.
Care for your knife by hand, without running too much water over the handle, then dry it with a soft cloth before you put it away.

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
