The Wusaki Yoshi G3 nakiri knife 16.5cm is made by the Tsunehisa cutlery workshop in Japan. It offers plenty of advantages: efficiency and a great grip, all while looking good. Its wide blade lets you cut vegetables with ease and precision. There's no need to wait to equip yourself with this useful, good-looking knife of Japanese quality.
An efficient, long-lasting edge
The blade is built on a San Maï base, meaning 3 alternating layers of steel. At its center, the core is Ginsan steel, a Japanese steel with a carbon content of 0.95%, making the edge harder and more rigid for a long-lasting cutting edge. This Ginsan steel core is then wrapped in a layer of stainless steel, adding extra protection and suppleness. The difference between the steels is visible near the bottom of the blade, thanks to a small wave line. The hardness is 59/60 HRC on the Rockwell scale, making it easy to sharpen while keeping a good hold on its edge.
An oak handle with a dark, striking style
This handcrafted Japanese knife sports a handle made of smoked oak, a remarkably sturdy and watertight wood. The baikoku oak is given a smoking treatment that gives it this distinctive dark hue. The smoking process also brings out the elegance of the wood's natural grain. This octagonal handle means a comfortable grip for right- and left-handers alike, while the wood paste added between the handle and the blade keeps out any water or food residue.
An authentic, refined design
The Wusaki knife in the Yoshi G3 series is hammered, so you can see pitted patterns on the blade that look like droplets of water splashing across the cutting surface, making every piece unique. Finally, kanji have been discreetly engraved, adding even more authenticity to the knife.
Care for your knife by hand, without running too much water over the handle, then dry it with a soft cloth before you put it away.

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
