Traditional handcrafted design
The Wusaki Nakata Erable BS2 16.5cm santoku knife is made entirely in Japan by the renowned Tadafusa cutlery workshop, based in Sanjo (Niigata), known for its long-standing artisanal tradition. The blade is meticulously shaped by hand, following processes inspired by the ancestral techniques of blacksmiths of old. This knife lets you combine style, tradition and efficiency!
A premium-grade alloy
Made from Japanese Blue Steel n°2, our santoku knife has plenty going for it. This alloy, enriched with carbon (1.2%), stands out for its exceptional hardness (62-63 HRC). This trait means a long-lasting cutting edge, for outstanding cutting efficiency. Use after use, this knife keeps its edge, giving you clean results every time. On top of that, it's a steel that's easy to sharpen, saving you time despite its rigidity. It also has a protective stainless steel coating that shields it from corrosion and impact.
A sturdy maple wood handle
The Wusaki Nakata Erable BS2 santoku knife has a handle made of maple wood. This exceptionally dense species offers enhanced resistance to impact, moisture and wear. Built for daily use, maple is a reliable material that ensures long-term durability. What's more, the grain of each knife is unique!
No detail left to chance
The outer stainless steel layer has a magnificent Nashiji finish, giving each knife its own authentic character.
The blade is then sharpened on a water stone by an expert, at a different but very pronounced angle, making cutting even easier still.
Pleasant to hold, to use and to look at, the knife will quickly become an indispensable asset in your kitchen.
We recommend hand-washing it, then drying it with a microfiber cloth to avoid unsightly moisture marks, and storing it somewhere dry. It's important never to let the handle get too wet, even when washing it. Note that the coloring near the cutting edge gradually turns a dark blue shade even with proper care, due to the steel's reactivity. This poses no danger.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
