The Wusaki Nakata Erable BS2 13.5cm utility knife is made entirely in Japan by the renowned Tadafusa cutlery workshop, based in Sanjo (Niigata), celebrated for its centuries-old know-how. The blade is meticulously hand-forged, following techniques passed down from the blacksmiths of old. Choose performance and authenticity with the Nakata Erable BS2!
Greater hardness, a lasting edge
Made from Japanese Blue Steel n°2, our utility knife offers plenty of advantages. This alloy, enriched with carbon (1.2%), is known for its exceptional rigidity (62-63 HRC). Thanks to this, its cutting edge stays sharp for a long time, delivering optimal cutting performance. Use after use, this knife stays effective and delivers consistent results. What's more, this steel is easy to sharpen, saving you time despite its rigidity. It's also coated in stainless steel to resist corrosion and impact.
A handle with remarkable grain
The Wusaki Nakata Erable BS2 utility knife has a handle made of maple. This particularly dense wood offers strong resistance to impact, moisture and wear. Suited to regular use, maple is a reliable material that will stay with you for many years. What's more, the grain pattern differs on every single knife!
Elegance down to the smallest detail
The outer stainless steel layer has a gorgeous Nashiji finish, making every knife a one-of-a-kind piece.
The blade is then sharpened on a water stone by an expert, at a very pronounced angle, making cutting even easier.
The knife feels great in the hand, handles smoothly, and looks the part. It will quickly become an essential part of your kitchen.
We recommend hand-washing, then drying with a microfiber cloth to avoid unsightly moisture marks, and storing it somewhere dry. Never let the handle get too wet, even when washing it. Note that the area near the cutting edge will gradually turn a dark blue shade even with proper care, due to the steel's reactivity. This poses no risk.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
