The Wusaki Nakata Erable BS2 16.5cm nakiri knife is produced entirely in Japan by the renowned Tadafusa cutlery workshop, based in Sanjo (Niigata), famed for its traditional expertise. The blade is carefully hand-hammered, using methods handed down from blacksmiths of old. The Nakata Erable BS2 range of handcrafted Japanese knives brings together style, tradition and performance.
A hard, high-performing blade
Made from Japanese Blue Steel n°2, our vegetable knife has plenty of advantages. This alloy, enriched with carbon (1.2%), is known for its high rigidity (62-63 HRC). This gives its cutting edge long-lasting durability, guaranteeing exceptional cutting performance. Use after use, this knife stays effective, delivering clean, precise cuts. What's more, this steel is easy to sharpen, saving you time despite its rigidity. Finally, it's coated in stainless steel, forming a barrier against corrosion and reducing its fragility.
Maple wood with a one-of-a-kind grain
The Wusaki Nakata Erable BS2 nakiri knife has a handle made of maple wood. This extremely dense species shows greater resistance to stresses such as impact, moisture or wear. Designed for daily use, maple is a reliable wood that will stay with you for the long haul. What's more, its grain also differs on every single knife!
A knife with meticulous finishing
The outer stainless steel layer has a magnificent Nashiji finish, giving each knife a character all its own.
After that, the blade is sharpened on a water stone by a professional, at a different but very pronounced angle. This makes cutting even easier.
The knife is a pleasure to hold, to use and to look at. It will quickly become an asset in your kitchen.
We recommend hand-washing it, then drying it with a microfiber cloth to avoid unsightly moisture marks, and storing it somewhere dry. Never let the handle get too wet, even when washing it. It's worth noting that, even with proper care, the area close to the cutting edge will gradually darken to a deep blue shade over time — this poses no risk whatsoever, since the steel is highly reactive.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
