The Wusaki Yaketa VG10 bunka knife is a versatile kitchen tool. Ideal for preparing vegetables, meat or fresh herbs, it makes cuts similar to a santoku knife. With a more pointed blade than the santoku, it lets you slice, cut and mince your food with a jeweler's precision.
Damascus steel for a razor-sharp, protected edge
The blade is the result of remarkable damascus work. Beyond giving it a distinctive look, the damascus construction also boosts its performance. A rigid steel core is wrapped in numerous layers of softer steel. The result is a highly sharp cutting edge that keeps its effectiveness over time, along with a blade that resists impact. The core here is made of Japanese VG10 steel, rated at 60 HRC on the Rockwell scale.
A hammered blade and an octagonal handle
Small dimples are visible on the upper part of the blade. They are created by the final hammering the blade undergoes. These dimples help keep food from sticking to the blade during cutting. The handle, for its part, is made of oak, one of the most prestigious wood species. Hard, sturdy and durable, oak also offers a lovely range of tones. With its octagonal shape, the handle gives you a comfortable grip and greater maneuverability.

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
