The Wusaki Yaketa VG10 nakiri knife is a great choice for cutting fruit and vegetables. It sports a wide 17cm blade that naturally creates a rocking motion thanks to its height and rounded tip. A damascus, hammered blade
The blade is the result of a manufacturing process known as "damascus". Beyond giving the knife an undeniable aesthetic touch, a damascus blade is above all a guarantee of greater cutting performance and greater strength. A core made of hard steel is surrounded by a multitude of layers of softer steel. The cutting edge thus benefits from a razor-sharp edge while being protected against shocks thanks to the shield surrounding it. Here, the alloy used is Japanese VG10 steel. It resists corrosion better and reaches 60 HRC on the Rockwell scale.
An oak wood handle
The handle showcases a noble material, oak wood! This wood species is widely popular in the furniture industry, notably thanks to its extreme sturdiness. With its octagonal shape, the handle gives you a firm, comfortable grip on the knife. The lower part of the handle is burnt, so as to accentuate the contrast between the wood's different tones. Light and highly maneuverable, it lets you cut your vegetables quickly.

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
