The Wusaki Yaketa VG10 santoku knife is the Japanese equivalent of the chef's knife. Usable on a wide range of foods, it's the favorite knife of Japanese chefs. It features hammering that gives it small dimples: these have a non-stick effect on food, which improves your comfort while cutting.
A beautiful damascus pattern for better efficiency
The blade shows off a very beautiful damascus pattern which, beyond its aesthetic appeal, is also synonymous with better performance. A hard steel core is clamped between several layers of softer alloys. The cutting edge is therefore rigid and very sharp, while being protected by a softer structure. The additional layers serve to cushion shocks, impacts and flexing of the blade. The core here is made of Japanese VG10 steel, a steel reaching 60 HRC on the Rockwell scale.
Oak wood takes center stage
The handle, meanwhile, is made of oak wood, a species prized for its extreme sturdiness. Widely used in furniture-making, oak is a wood resistant to impact, warping and moisture. Also very elegant, it brings real authenticity to the knife. The end of the handle has been deliberately burnt to increase its rigidity. This detail also accentuates the variation in its tones. It's an octagonal handle, giving you a very pleasant grip on this Japanese knife.

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
