The #3000 fine-grit side: a razor-sharp result
This side is perfect for finishing the edge of your standard knives (with a hardness around 60 HRC). Since its abrasive surface has a fine grit, it even starts refining the cutting edge (that is, the very outermost part of the edge). This side can also act as a middle step for knives with very hard blades that can handle sharpening all the way up to ultra-fine grits, such as #8000.
The #8000 very fine-grit side: a flawless finish
This side is fully recommended for finishing work, to smooth out the edge of the knife. The extreme fineness of its grit truly reveals a blade's cutting quality (whose first factory sharpening isn't always very convincing). This side simply lets you polish the edge. We recommend using it on knives above 60 HRC, since others won't hold such a precise sharpening.
Easy enough for anyone to use
The Wusaki stone needs to be soaked for around fifteen minutes before use. Then position your blade so there's roughly the thickness of a coin between the steel and the stone, and move it back and forth while applying light pressure. Just repeat on both sides of the blade for a great result. Want to test how sharp the knife is? A sheet of paper will tell you straight away. Dimensions: (L) 18 x (W) 6 x (H) 3cm.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
