The #600 coarse/medium-grit side: reviving a dull edge
This side is suited to preparing a knife that has grown quite dull, taking it a step closer to a fully refined edge. Its fairly abrasive grit grinds down the cutting edge and cleans it up.
The #1000 medium-grit side: regular upkeep
It's ideal for regular use, since it keeps a good cutting level without letting the knife get too dull. It saves you from having to reach for a coarser, more abrasive grit (which can remove too much material). You can also use it after the #600 side, to refine that first sharpening.
Easy enough for anyone to use
Soak it for around fifteen minutes before use. Then position your blade so there's roughly the thickness of a coin between the steel and the stone, and move it back and forth while applying light pressure. Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
