Fine slices of meat and fish
The Wusaki Migaki G3 27cm sujihiki knife is the work of Japanese cutler Tsunehisa. The knife is the Japanese equivalent of the Western slicing knife. Its long 27cm blade is ideal for finely slicing your cuts of meat or fish. The quality of the edge helps preserve the texture of the flesh as you cut.
Exceptional cutting quality
The blade has a San Maï structure, made up of three alternating layers of steel. At its center is Japanese Ginsan steel (0.95% carbon): this stiffens the edge, making it sharper and longer-lasting. This core is covered on each side by a layer of stainless steel that protects the cutting edge from impact. The small wave visible on the lower part of the blade traces this assembly of steels. The blade's hardness is 60 HRC on the Rockwell scale, which makes for easy sharpening.
Ergonomics and a beautiful handle
The handle is made of enju wood, a material that's both rigid and lightweight, grown in Asia. Offering a pleasant grip, the handle has an attractive light tone with a glossy effect. Note that the grain of the wood is unique on every single knife! This ergonomic handle suits right- and left-handed cooks alike, thanks to its octagonal shape. Finally, a bonding agent is injected between the handle and the blade to fill the gap and make the whole thing watertight and hygienic.
Understated, authentically Japanese design
The knife has a remarkably understated design, with a simple blade that proves formidably effective. The Wusaki logo on the front and discreet kanji on the back of the blade have been meticulously engraved for added authenticity.
The knife should be cleaned by hand, without letting the handle get too wet under running water. Then be sure to dry it and store it in a dry place.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
