The Wusaki Fujiko Black 10Cr paring knife is the ideal companion to the chef's knife. With its small, slim 9cm blade, it handles cutting smaller items: small vegetables, fruit, small pieces of meat or fish, or aromatic herbs. It's versatile and allows for precise, meticulous cuts!
"San Mai" for an even sharper edge
The knife has a blade known as "San Mai", a reference to its distinctive construction. This manufacturing process, which originated in Japan, uses a rigid steel core wrapped on each side by a layer of softer steel. This core is made of 10Cr15CoMoV stainless steel, an alloy that's especially hard thanks to its high carbon content (1.05%). This hardness translates into a sharp edge and exemplary performance. The two layers of softer steel clamping the core in place also act as a shield against knocks and impacts.
Style and comfort combined in a handle
Your handling comfort is ensured by a carefully crafted handle. It's made from Pakkawood, a composite material combining laminated wood and resin under hot compression. This pakka wood is waterproof and extremely sturdy. On top of its ergonomic shape, the handle boasts lovely finishing touches: a base engraved with the Japanese kanji for "Tiger", two red edgings, a mosaic rivet and a stainless steel bolster.

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
