The Wusaki Fujiko Black 10Cr nakiri knife has the kitchen blade best suited to cutting vegetables. At 17cm long and fairly tall, it keeps the hand holding the handle from hitting the worktop. This lets you chain your cutting movements with much greater ease. Its slightly rounded tip helps create a natural rocking motion, making for faster cutting. Whether you're slicing, cutting or chopping your vegetables, the nakiri rises to the occasion brilliantly!
A "San Mai" that boosts performance
This nakiri is a San Mai knife. Of Japanese origin, the term "San Mai" refers to a construction process involving three layers of steel. Manufacturers select a very hard steel to form a rigid core. Around this core, they build up a layer of softer alloy on each side. The result is an extremely sharp edge, plus a blade shielded from knocks thanks to the two added layers in its structure. The core here is made of stainless 10Cr15CoMoV steel, a rigid steel that reaches 60 HRC on the Rockwell scale. With 15% chromium, it also resists corrosion very well.
A handle as elegant as it is comfortable
You'll also enjoy a remarkably well-crafted handle. It showcases Pakka wood, a material combining laminated wood and resin. Waterproof and shock-resistant, Pakka needs no maintenance beyond a simple wash after use, unlike natural woods. This handle also boasts several elegant finishing touches: a stainless steel bolster, a base engraved with the Japanese kanji for "Tiger", a mosaic serving as a rivet, and two red edgings offering a lovely contrast with the Pakkawood's tone.

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
