A knife that rounds out your kit
The Fujiko 10Cr utility knife sits halfway between a chef's knife and a paring knife. Its slim, medium-sized blade is suited to precision cutting. It lets you thinly slice a small piece of meat, finely cut small fruit and vegetables, or prepare fish fillets.
A damascus knife with a razor-sharp edge
The knife has a damascus blade, the fruit of painstaking craftsmanship. Manufacturers shape a very rigid steel core, then build up several layers of softer alloy around it. This assembly is essential, as it boosts the edge's sharpness, its durability and the blade's overall strength. The core is made of 10Cr15CoMoV stainless steel, a very hard alloy rated at 60 HRC on the Rockwell scale. This premium stainless steel has a 15% chromium content, an element that protects it against the risk of corrosion.
A handle blending style and sturdiness
The handle, meanwhile, gives you an excellent grip on the knife. With its ergonomic curved shape, it's crafted from superb olive wood. Wood is a living material that produces different grain and tones on every knife: your knife is therefore one of a kind! Alongside this, you'll enjoy a beautiful central mosaic that also serves as a sturdy rivet, two red edgings offering a lovely contrast with the wood, and a stainless steel bolster linking it to the blade. The base, for its part, is engraved with the Japanese kanji for "Tiger"!

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
