The ideal knife for vegetables
With its wide, thick blade, the Wusaki Fujiko 10Cr nakiri knife is built for cutting vegetables. It naturally creates a rocking motion that's ideal for slicing vegetables thinly, as well as for chopping aromatic herbs without crushing them. It also lets you cut vegetables into strips, rounds or shavings. At the same time, its flat, wide blade doubles as a handy tool for moving your freshly cut food.
A remarkable damascus blade
The blade is the result of damascus work that gives it both efficiency and a look that's sure to win you over. How is a damascus blade made? To achieve this, manufacturers take a piece of very hard steel and wrap it in several layers of softer alloy. This blend of steels gives the blade a razor-sharp, long-lasting edge, on top of making it more shock-resistant. At the heart of the blade is 10Cr15CoMoV stainless steel, whose hardness reaches 60 HRC on the Rockwell scale. This high-grade stainless steel ensures a long-lasting edge that needs little sharpening, along with excellent resistance to corrosion.
A handle as beautiful as it is high-performing
The handle, meanwhile, gives you an excellent grip on the knife. With its ergonomic curved shape, it's crafted from superb olive wood. Wood is a living material that produces different grain and tones on every knife: your knife is therefore one of a kind! Alongside this, you'll enjoy a beautiful central mosaic that also serves as a sturdy rivet, two red edgings offering a lovely contrast with the wood, and a stainless steel bolster linking it to the blade. The base, for its part, is engraved with the Japanese kanji for "Tiger"!

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
