The Wusaki Unagi AUS10 Japanese santoku knife 16.5cm is made in Japan by the Tsunehisa cutlery workshop. This typically Japanese knife shape is practical, letting you cut, mince, chop and chisel your food. It's a versatile knife suited to professionals and amateurs alike. Equip yourself with a tool that's as effective as it is beautiful to look at!
A unique, high-performance blade
The blade of the Unagi knife is damascened. Its core is made of Japanese AUS10 steel with a carbon content of 1.05%. This makes the cutting edge stiffer, for better edge retention. Its hardness reaches 60 HRC, making it an alloy that's easy to sharpen with a whetstone. This core is then surrounded by several layers of nickel-enriched steel, which create the slight contrast between the different layers and allow them to be identified. The damascus balances the hardness of the core, adds a certain suppleness to the blade and brings a unique aesthetic.
An oak wood handle
The handle is made of oak wood, a durable, sturdy species valued in cutlery. It also resists moisture, shock and vibration. Thanks to its octagonal shape, the handle suits ambidextrous use! It stays light and easy to handle for comfortable use even over time. Finally, this handle is lacquered in black, darkening the oak's natural shade for a result with more character. A binder has been injected between the handle and the blade, making the whole thing watertight and hygienic.
A truly authentic design
The damascus pattern on the Wusaki Unagi AUS10 knife is one of a kind. The layers follow one another in a circular shape, as if a drop of water had fallen onto the cutting surface, creating small ripples. This finish makes every piece unique. Finally, the logo has been engraved in the form of fine, discreet kanji for even more authenticity.
Wash your knife by hand, being careful not to run too much water over the handle, then dry it with a soft cloth before putting it away.

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
