The Wusaki Unagi AUS10 8cm paring knife is made in Japan by the Tsunehisa cutlery workshop. This versatile, highly maneuverable knife is perfect for slicing small fruit and vegetables, as well as any compact ingredient. It suits professionals and demanding home cooks alike, anyone looking for Japanese quality without sacrificing practicality.
A blade with a stunning Damascus pattern
The blade of the Wusaki Unagi knife is made of Damascus steel, with a core of Japanese AUS10 steel containing 1.05% carbon. This core is wrapped in several nickel-enriched steel layers, creating a subtle contrast that highlights the different strata. With a hardness of 60 HRC, the blade offers a rigid edge for increased durability while remaining easy to sharpen. The Damascus pattern is not just decorative: it also balances the core's rigidity by adding suppleness to the blade.
An ergonomic oak handle
The handle is made of oak wood, prized in cutlery for its sturdiness. Resistant to moisture, impact and vibration, it's light and easy to maneuver, giving an ideal grip. Suited to ambidextrous use, it's lightly lacquered in black, which darkens the natural tone of the oak. A bonding agent is injected between the handle and the blade to fill the gap and guarantee both watertightness and hygiene.

This Japanese knife from the Unagi AUS10 range features an exceptional Damascus pattern. The different layers form a circular pattern, evoking the ripples created by a drop of water falling onto the blade. Together, the blade and handle create a result that's both unique and refined. Finally, the logo is finely engraved on the cutting surface, adding a touch of authenticity.
This knife is cared for by hand, avoiding getting the handle too wet. Then wipe it with a soft cloth before storing it.

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
