The #1000 medium-grit side: regular upkeep
This side is recommended for regular use, since it keeps a good cutting level without letting the knife get too dull. It saves you from having to reach for a coarser, more abrasive grit (which removes more material). If you only ever owned one stone, this grit would be the one: it delivers a subtle sharpening without wearing down the steel alloy.
The #6000 extra-fine-grit side: a perfect finishing touch
This side is ideal for finishing off the knife's cutting edge. Because the grit is so fine, it even starts refining the very edge of the blade (the outermost part of the cutting line), bringing out its full potential. It can also act as a middle stage for very hard blades that can handle sharpening all the way up to ultra-fine grits (up to 12000, for instance).
Easy enough for professionals and home cooks alike
Soak it for around fifteen minutes before use. Then position your blade so there's roughly the thickness of a coin between the steel and the stone, and move it back and forth while applying light pressure. Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
