This Wusaki ko-santoku proves to be highly versatile. It's ideal for slicing vegetables, prepping herbs or cutting small pieces. Its compact size makes it very pleasant to use. Its smaller footprint helps keep excellent control. It's handy when work space is limited. It naturally sits between a paring knife and a classic santoku. It easily handles quick everyday prep. It also stays efficient for more varied cuts. Its case lets you store it, protect it or give it as a gift.
A precise, eye-catching blade
Its 13cm blade offers a good balance between precision and maneuverability. It suits vegetables as well as boneless meats. Its 10Cr15CoMoV stainless steel core ensures a clean, long-lasting cut. Its hardness of around 60 HRC guarantees good edge retention. The 67 Damascus layers reinforce the blade and create beautiful patterns. The flat grind eases entry into food. The cut stays clean, smooth and well controlled.
A comfortable, distinctive handle
The handle blends resin, carbon fiber and nuggets of gold leaf. The name Sakin means "gold dust". Every knife therefore has a unique look. The resin resists moisture and stays pleasant in the hand. The carbon fibers reinforce the structure. The Western shape with bevelled base ensures a natural grip. Two stainless steel rivets and a brass mosaic rivet firmly secure the scales. The stainless steel bolster and base improve overall balance.

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
