The Wusaki Nawame AUS-10 Damascus sujihiki knife is suited to preparing fish. Its long, thin blade lets you cut beautiful slices, for sashimi, for example. Handcrafted in Japan by the Tsunehisa cutlery workshop, this knife features a Damascus blade with a hammered finish. Each piece has its own pattern, a result of handcrafted production.
A blade with highly appealing kitchen capabilities
The blade has an AUS-10 stainless steel core surrounded by several layers of steel. This construction offers a good balance between edge retention and ease of care. AUS-10 steel contains around 1.05% carbon, for a hardness of 60 HRC on the Rockwell scale. It delivers precise cutting throughout your use. The hammering can limit certain foods from sticking to the upper part of the blade.
A beautiful handle in fine wood
The handle and bolster are made of ebony wood. This dense wood is sturdy, and its dark shade matches the Damascus blade perfectly. A red Corian spacer creates a contrast between the different parts of the handle. Its octagonal shape offers an ambidextrous grip. Wood putty is applied at the joint to limit the infiltration of residue.

The knife is cared for by hand, without getting the handle too wet. The knife should be wiped with a soft cloth before being put away.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
