The Wusaki Migaki G3 Japanese chef's knife 21cm is made in Japan by knifemaker Tsunehisa. The chef's knife is the most versatile knife there is: chopping, mincing, cutting, chiseling... It's designed to be practical and indispensable. Professionals and amateurs alike will love equipping themselves with this effective, good-looking knife!
Quality steel
The blade is built on a San Maï structure (3 alternating layers of steel). At its center, the core is made of Japanese Ginsan steel, whose carbon content reaches 0.95%, which hardens and stiffens the wire for a long-lasting cutting edge. This core is then surrounded by a layer of stainless steel, adding extra protection and suppleness. The difference in steel can be seen at the bottom of the blade, thanks to a small wave. The hardness reaches 60 HRC on the Rockwell scale: the blade is easy to sharpen with excellent edge retention.
An ideal grip
The handle is made of enju wood, a species native to Asia that's sturdy yet stays light for a good grip on the knife. The handle has a light shade with a slight glossy effect. Note that the wood grain is unique to every piece. Its octagonal shape suits both right- and left-handed cooks! Finally, a binder has been injected between the handle and the blade to fill the gap, making the whole thing perfectly watertight and hygienic.
A simple yet elegant design
The knife offers a very understated design, with a simple blade that's no less effective for it. The brand's logo on the front and discreet kanji on the back of the blade have been finely engraved for added authenticity.
Wash your knife by hand, being careful not to run too much water over the handle, then dry it with a soft cloth before putting it away.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
