The highly versatile Japanese knife
The Wusaki Migaki 18 cm Japanese chef's knife is a versatile model, ideal for a wide range of cuts. It lets you slice vegetables thinly, chop fresh herbs, and cube pieces of meat. Be careful not to use it on foods that are too hard, such as frozen items or pieces with bones or fish bones!
A San Maï blade with a remarkable edge
The blade has a distinctive San Maï structure, with three alternating layers of steel. At its heart is Japanese Ginsan steel (0.95% carbon), which stiffens the edge for exceptional cutting quality and durability. This core is wrapped on each side by a layer of stainless steel, offering superior protection against impact. The small wave visible at the bottom of the blade reveals this sophisticated assembly of steels. Thanks to its hardness of 60 HRC on the Rockwell scale, the blade allows for remarkably easy sharpening.
An ambidextrous octagonal handle
The handle is made of enju wood, a rigid, lightweight material grown in Asia. Offering a pleasant grip, it has an attractive light tone and a glossy effect. The wood's grain is unique on every single knife! This ergonomic, octagonal handle suits right- and left-handed cooks equally well. Finally, a bonding agent is injected between the handle and the blade, filling the gap to ensure the knife is watertight and hygienic.
A design built on understatement
The knife has an understated design, with a simple blade of formidable effectiveness. The Wusaki logo on the front and the discreet kanji on the back of the blade have been meticulously engraved for added authenticity.
Cleaning should be done by hand, avoiding excessive wetting of the handle. Wipe it carefully before storing it in a dry place.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
