Coming out of the Tsunehisa workshop, the Wusaki Kuronawa G3 damascus utility knife features a 13.5cm blade. This Japanese knife was specially designed to meet the demands of every cook. Its sturdy build and carefully studied ergonomics make it the ideal tool for working with meat, fish and small vegetables with disarming ease – notably excluding bones and frozen food.
A damascus, technical blade
The cutting surface reveals a damascus pattern with wavy motifs, the unmistakable signature of Japanese craftsmanship. This refined look hides a Ginsan steel with a carbon content of 0.95%, known for its wear resistance and ease of maintenance. With a hardness of 59/60 HRC, the blade offers a perfect balance between firmness and flexibility, guaranteeing a clean, long-lasting cut. The hammering visible on the upper part of the blade plays a double role: it significantly limits food adherence while adding a distinctive visual touch that elevates the piece.
An ebony handle combining function and elegance
The octagonal ebony wood handle, a noble material resistant to moisture, ensures a natural, secure grip, suited to right- and left-handers alike. Rounded out by a black buffalo horn bolster, this sturdy, good-looking handle adds a touch of authenticity and refined contrast.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
