Grit 3000: polishing for a razor-sharp edge
This Japanese whetstone has a first side with a fine 3000 grit. This grit suits knife blades with a hardness above 60 HRC on the Rockwell scale, which have a long-lasting edge. It's a versatile side that lets you give your blades a thorough polish, to deliver a razor-sharp edge.
Grit 8000: reaching an extreme edge
This Wusaki whetstone also has a second side carrying a very fine 8000 grit. Use this side when you want to unlock the full cutting potential of your blade, bringing it as close as possible to its most extreme edge. This type of very fine grit is likewise reserved for blades with a hardness equal to or above 60 HRC.
A sharpening tool anyone can use
Getting the Suehiro whetstone ready couldn't be easier: let it sit in water for 5 to 10 minutes first. This gives the stone time to take on the moisture it needs before sharpening. Then use the supplied Nagura stone to create a slurry, an essential step in preparing the whetstone. Rub this small stone against the dampened whetstone to release its abrasive particles and build up a slurry that boosts its effectiveness.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
