Description
A versatile knife for every use
Discover the Wusaki Kuronawa G3 damascus Japanese santoku knife, 16.5cm, forged by the Tsunehisa workshop. Designed for demanding cooks, this versatile knife combines technical performance with timeless elegance. Whether you're a professional or a passionate home cook, its precision and comfort make it a knife of choice for elevating every preparation. It lets you cut meat, fish, and vegetables too (not bones or frozen food).
A damascus blade with interesting properties
The cutting surface reveals a wavy damascus pattern, the fruit of skilled craftsmanship. Behind this look lies a Ginsan steel (0.95% carbon), known for its wear resistance and ease of sharpening. With a hardness of 59/60 HRC, this knife offers an optimal balance between firmness and flexibility. The hammering visible on the upper part of the blade limits food adherence while adding a distinctive visual touch.
An ebony handle combining sturdiness and looks
The octagonal ebony wood handle ensures a natural, secure grip, suited to right- and left-handers alike. Resistant to moisture and impact, this noble material is set off by a black buffalo horn bolster, adding a touch of authenticity and refined contrast.
An authentic, timeless design
Between the damascus shimmer, the delicate hammering, and the blade's polished finish, this knife wins people over with its clean, refined style.
Care for the knife by hand, without letting the handle get too wet. Wipe the knife dry with a soft cloth before putting it away.

Care & sharpening
Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
