The Wusaki Kuronawa G3 damascus Japanese chef's knife, 21cm, is made by the Tsunehisa cutlery workshop in Japan. It offers, for instance, excellent efficiency and a pleasant grip, all while looking strikingly stylish. As a chef's knife (gyuto), it's versatile by design (meat, fish, vegetables...). A blade as visual as it is technical
With its damascus structure, the blade is made up of several alternating layers of steel. At its center, a Ginsan steel core, a Japanese steel with a carbon content of 0.95%, gives the edge extra hardness and rigidity for a better-holding edge. You can see the steels blending together through the unique metallic waves created on the cutting surface. Hardness sits at 59/60 HRC on the Rockwell scale, making it easy to sharpen while holding its edge well. What's more, the knife benefits from an attractive hammering across the upper surface of its blade.
An octagonal ebony handle
This Japanese knife features an ebony handle, a wood species resistant to impact, vibration and moisture. Its dark tones make this noble wood a true visual feature. With its octagonal shape, it suits different cooks well, whether right- or left-handed. A black buffalo horn bolster rounds out the whole (being a natural material, slight color differences may be observed).

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
