The Wusaki Migaki knife has a blade that closely echoes the simplicity of Western knives, yet its makeup is every bit as Japanese. It's what's known as San Mai, made of 3 alternating layers of steel, with a Japanese Ginsan steel core at its center, whose carbon content of 0.95% gives it a harder, more rigid edge for lasting sharpness! This core is wrapped in a layer of steel that adds protection and suppleness to the blade. This difference in alloys can be seen at the bottom of the blade, where a small wave runs along the entire cutting edge. This blade reaches a hardness of 60 HRC, making it easy to sharpen!
The brand logo on the front of the blade and kanji on the back are finely engraved, adding authenticity.
The handle is made of enju wood, a sturdy Asian species with a light tone and unique grain! It's slightly glossy and gives these pieces a perfect finish. Its octagonal shape lets it suit both right- and left-handed cooks.
