The Wusaki Migaki G3 13.5cm Japanese utility knife is made in Japan by the Tsunehisa cutlery workshop. The utility knife is a small, multi-purpose kitchen knife, ideal for cutting fruit and vegetables, small pieces of meat or fish, as well as fresh herbs or cheese. Whether you're a professional or a passionate home cook, this Wusaki knife has everything it takes to become your kitchen ally!
A premium-grade alloy
The blade is made using a process called San Maï, involving three alternating layers of steel. At the center, the core is made of Japanese Ginsan steel, an alloy with 0.95% carbon that gives a very hard edge, ensuring cutting quality is maintained over time. This core is covered on each side by a layer of stainless steel that adds suppleness to the blade, making it more resistant to impact. The combination of alloys is visible on the blade, where you can see a small wave running along its entire length. With 60 HRC on the Rockwell scale, the blade remains easy to sharpen.
A comfortable grip
The handle is made of enju, a wood grown in Asia known for its great rigidity and light weight, allowing intuitive use of the knife. With its elegant light grain, the wood offers different tones on every model, making your knife a one-of-a-kind piece! Finally, a bonding agent built into the join between handle and blade fills the gap, ensuring the knife is watertight and hygienic.
Understated, elegant design
This Japanese knife features a deliberately understated design, simply to let its technical qualities speak for themselves. As subtle finishing touches, the Wusaki logo and kanji have been engraved on the blade, asserting the authenticity of this prestigious knife.
Clean your knife by hand, without over-wetting the handle. Then be sure to dry it with a soft cloth before storing it.

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
