The Wusaki Padouk 20cm Chinese chef's knife is an indispensable tool for a whole range of cuts! Its versatile blade is ideal for thinly slicing vegetables, mincing boneless meat, crushing garlic cloves and finely chopping fresh herbs with precision. That said, to preserve its durability, it's best kept away from very tough ingredients such as squash, bone-in cuts or frozen food.
Traditional San Mai construction
This Wusaki knife uses the Japanese San Maï technique, which involves forging a blade with a rigid steel core and a softer outer layer. The alloy used here is 440C steel: enriched with carbon, it gives the blade a fairly high hardness of 57 HRC, while remaining supple enough to withstand impact and contact with bone. Enriched with 17% chromium, it offers good corrosion resistance, though regular care is needed to prevent oxidation. The layering, visible on the cutting edge, balances hardness and protects the core of the blade.
A lightweight, sturdy handle
The handle of this knife is fashioned from padouk wood, an exotic species native to Africa, valued for its resistance to moisture and its durability. This sturdy wood stands out for its warm reddish-brown tone, giving the knife a natural elegance. The join with the blade is firmly secured by a stainless steel bolster, while two stainless steel rivets reinforce the handle. The result is exemplary stability when handling the knife. Its ergonomic shape, suited to right- and left-handed cooks alike, offers a comfortable grip, and proves ideal for extended use.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
