A Wusaki Padouk Chinese chef's knife 17.5cm is a tool made for real cutting versatility! Its multi-purpose blade lets you slice vegetables, chop boneless meat, crush garlic cloves and finely chop aromatic herbs with great precision. That said, to keep it working well for longer, steer clear of very hard ingredients like squash, bones or frozen food.
A beautiful, traditional San Mai
This Wusaki knife relies on the Japanese San Maï method: a blade forged around a rigid steel core, wrapped in a softer outer layer. The alloy used here is 440C steel: enriched with carbon, it gives the blade a fairly high hardness of 57 HRC, while staying supple enough to withstand impacts and bone contact. Enriched with 17% chromium, it offers good resistance to corrosion, although regular care is needed to prevent oxidation. The layering, visible along the cutting edge, balances the hardness and protects the core of the blade.
A one-of-a-kind padouk wood handle
The handle of this knife is made from padouk wood, an exotic African species known for its resistance to humidity. This keeps it from warping over time. This durable, sturdy wood stands out for its warm reddish-brown hue. A solid bolster links it to the blade, and the handle is reinforced with two stainless steel rivets for outstanding stability and reliability. Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
