The Wusaki Padouk 20cm Chinese chef's knife is a must-have for countless cuts! Its multi-purpose blade is perfect for thinly slicing vegetables, mincing boneless meat, crushing garlic cloves and finely chopping fresh herbs with precision. That said, to ensure its longevity, it's best not to use it on very hard foods such as squash, bones or frozen items.
Exceptional construction
The Wusaki knife stands out for its 7Cr17MoV stainless steel blade, an alloy enriched with vanadium that offers excellent corrosion resistance. With a hardness of 56 HRC on the Rockwell scale, this blade combines flexibility and sturdiness, withstanding impact and contact with bone without risk of breaking. Its dark coating adds a rough-forged effect, giving the Wusaki knife a bold, distinctive authenticity.
A riveted padouk handle
The handle of this knife is crafted from padouk wood, an exotic African species prized for its resistance to moisture and its durability. This dense wood is recognizable by its warm reddish-brown tone, giving the knife a wholly natural beauty. A stainless steel bolster firmly secures the join with the blade, while two stainless steel rivets add further stability to the whole. This Wusaki kitchen knife, made in China, comes in an elegant box offering optimal protection. To preserve its quality, wash it by hand using a gentle sponge, taking care to keep the handle dry. After washing, dry it immediately and store it in a dry place. Never put it in the dishwasher and never leave it to soak in the sink, to keep it in top condition.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
