The Wusaki Padouk 17.5cm Chinese chef's knife is an essential tool for a wide range of cuts! Its versatile blade lets you thinly cut vegetables into slices, mince boneless meat, crush cloves of garlic and finely chop fresh herbs with great precision. That said, to preserve its durability, steer clear of very tough ingredients such as squash, bone-in cuts or frozen food.
A traditional construction
The Wusaki knife stands out for its 7Cr17MoV stainless steel blade, an alloy enriched with vanadium that offers excellent corrosion resistance. With a hardness of 56 HRC on the Rockwell scale, this blade combines flexibility and sturdiness, withstanding impact and contact with bone without risk of breaking. Its dark coating adds a rough-forged effect, giving the Wusaki knife a bold, distinctive authenticity.
A handle combining comfort and design
The handle of this knife is made of padouk wood, an exotic African species known for its strong resistance to moisture and its great durability. This dense, rigid wood stands out for its warm reddish-brown tone, which gives the knife a natural character. The join with the blade is firmly secured by a stainless steel bolster, while two stainless steel rivets reinforce the handle to boost stability and balance when handling it. Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
