A blade designed for delicate cuts
Wusaki steak knives feature a 10.5cm round-tipped blade in SUS420J2 stainless steel. This alloy is fully recommended for the kitchen, and so for contact with food. Why? Simply because it carries a chromium content of 14%, which makes it more resistant to oxidation. The cutting surface is semi-serrated: it glides easily through meat without damaging the flesh.
A practical, pleasant handle
The knife's blade is full tang, meaning it runs all the way to the end of the piece. 2 black POM scales are fitted on either side of that tang, held in place by highly visual punched rivets. POM is a polymer prized for its durability; it's also lightweight, resistant to temperature swings and knocks. Its clean lines give you a really good grip.
A timeless, well-judged style
Made in Seki, Japan, these knives are both understated and elegant. The original rivets stand out nicely against the black of the handle, and the flowing shapes are harmonious. They find their place at any table, whatever your style and décor. They come in a small black case, decorated with silver Japanese characters. It's a lovely idea for a gift.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
