The versatile knife with Japanese inspiration
The Wusaki Fujiko Black 10Cr santoku knife features an 18cm blade with granton edges. These small hollows create tiny air pockets between the steel and the food, preventing it from sticking. This makes for a noticeably more comfortable cutting experience every time you use the knife. The santoku is a multi-purpose knife that performs just as well on vegetables, fruit, fish or meat.
A remarkable "San Mai" construction
The knife features a superb San Mai blade. This Japanese term, meaning "three layers", sums up the blade's construction rather well. A hard stainless steel core is sandwiched between two layers of softer alloy. Thanks to the core's high carbon content, the cutting edge is razor-sharp, while the softer structure around it shields it from knocks and impacts. The core here is made of 10Cr15CoMoV stainless steel, an alloy that reaches 60 HRC on the Rockwell scale, with 15% chromium content giving it good resistance to corrosion.
An ergonomic grip
Your handling comfort is ensured by a carefully crafted handle. It's made from Pakkawood, a composite material combining laminated wood and resin under hot compression. This pakka wood is waterproof and extremely sturdy. On top of its ergonomic shape, the handle boasts lovely finishing touches: a base engraved with the Japanese kanji for "Tiger", two red edgings, a mosaic rivet and a stainless steel bolster.

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
