This set is made up of three kitchen knives: the chef's knife, the paring knife and the utility knife. With these three knives, an enormous range of cuts is open to you, since they're so versatile and complementary. Just as remarkable in looks as in performance, they'll accompany you through every recipe!
"San Mai" blades with a formidable edge
The knives in this set are San Mai knives. Of Japanese origin, the term "San Mai" refers to a construction process involving three layers of steel. Manufacturers select a very hard steel to form a rigid core. Around this core, they build up a layer of softer alloy on each side. The result is an extremely sharp edge, plus a blade shielded from knocks thanks to the two added layers in its structure. The core here is made of stainless 10Cr15CoMoV steel, a rigid steel that reaches 60 HRC on the Rockwell scale. With 15% chromium, it also resists corrosion very well.
Ergonomic Pakkawood handles
Your handling comfort is ensured by a carefully crafted handle. It's made from Pakkawood, a composite material combining laminated wood and resin under hot compression. This pakka wood is waterproof and extremely sturdy. On top of its ergonomic shape, the handle boasts lovely finishing touches: a base engraved with the Japanese kanji for "Tiger", two red edgings, a mosaic rivet and a stainless steel bolster.

Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
