The #240 coarse-grit side: when it stops cutting
It restores the edge of a very dull knife thanks to its powerful abrasive action. The very coarse grit cleans the edge (which can develop tiny steel teeth from repeated use, hindering the cut) and gets it ready for finer sharpening on higher grits afterward. It essentially strips your knife back to bare metal.
The #800 coarse/medium-grit side: to complete the first sharpening
This near-medium grit can serve several purposes. First, it will of course refine the edge produced by the first side (which roughs it out rather than delivering real cutting quality). On top of that, on blades with a lower hardness rating (below 55 HRC), it can be used as a regular stone, much like a #1000 grit, to maintain the edge (there's no point sharpening these blades on higher grits anyway, since they can't hold such a precise edge). Finally, it also serves as an intermediate step when sharpening hard knives (carbon blades, for example), before you gradually move up to 3000, 8000 grit and beyond.
Easy enough for anyone to use
It needs to be soaked for around fifteen minutes before use. Then position your blade so there's roughly the thickness of a coin between the steel and the stone, and move it back and forth while applying light pressure. Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
