Wusaki 1000 Grit Whetstone
Description
Description
The whetstone you need right now
It's practical and effective. It works equally well on Japanese-style and Western-style knives, so it adapts to whatever you need. Its black silicone base keeps it stable, for safe, secure use. How often you use it simply depends on the condition of your kitchen knives and how regularly you use them.
The #1000 medium grit: for regular upkeep
This grit is recommended for regular use, since it keeps a good cutting level without letting the knife get too dull. It saves you from having to reach for a coarser, more abrasive grit (which removes more material). Nor is this grit too fine, which would be pointless on knives with a lower HRC (since a very "fine" finish wouldn't hold on blades that aren't rigid enough).
An essential whetstone — the one to have
This is the one grit to keep if you could only pick a single stone: your edge stays clean and controlled, without ever taking off too much material, exactly as described above. A genuine must-have in your kit.
Easy enough for professionals and home cooks alike
Soak it for around fifteen minutes before use. Then position your blade so there's roughly the thickness of a coin between the steel and the stone, and move it back and forth while applying light pressure. Just repeat on both sides of the blade for a great result. Want to test how sharp the knife is? A sheet of paper will tell you straight away.

An essential for keeping your kitchen knives in shape
Care & sharpening
Care & sharpening
Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
