The Wusaki Unagi AUS10 15cm utility knife is made in Japan by the craftsmen at the Tsunehisa cutlery workshop. It's a compact, wonderfully intuitive knife. It's there for you when cutting boneless meat, fruit and vegetables... It suits home cooks and professionals alike, anyone looking to treat themselves to Japanese quality with a genuinely pleasant knife to use.
A remarkable Damascus blade
The blade of this Japanese knife features a Damascus pattern. Its core is made of Japanese AUS10 steel, an alloy containing 1.05% carbon, a high level compared to Western steels. This core is wrapped in a multitude of nickel-enriched steel layers. Together they create an elegant contrast on the surface of the blade, where you can make out the different superimposed layers. The blade's hardness reaches 60 HRC: the cutting edge is hard, so it keeps its sharpness over time while remaining easy to sharpen. Beyond its visual appeal, the Damascus construction also balances the blade by adding suppleness, making it less prone to breaking.
A sturdy, comfortable knife
The handle is made of oak wood, a durable species that has long proven itself in cutlery. This rigid wood stands up well to moisture, impacts and vibration. Comfortable and lightweight, the handle gives you an intuitive grip. Note too that it suits ambidextrous use. It's finished with a black lacquer that brings out the oak's natural dark grain. A bonding agent between the handle and the blade fills the gap, ensuring the knife is watertight and hygienic.

The Wusaki Unagi AUS10 knife is adorned with a Damascus blade of inimitable style! The multiple layers bring out a texture that can evoke the ripples spreading out from a drop of water. Together, the handle and blade form a high-quality handcrafted knife. Finally, the logo is finely engraved on the cutting surface, proof of its authenticity.
Clean the knife by hand, taking care to keep the handle as dry as possible. Dry it with a soft cloth, then store it in a safe place.

Use
- Cut with a straight, linear motion. Twisting motions damage the cutting edge and can break the blade.
- Use a wooden cutting board. Glass or marble dull the cutting edge over time.
Cleaning
- Wash by hand with a soft sponge and mild soap, then rinse with lukewarm water. Abrasive surfaces are not suitable for the steel.
- Oil the blade from time to time with a neutral mineral oil to protect it.
Sharpening
- Don't wait until the blade is completely dull: regular maintenance on a 1000-grit whetstone keeps an excellent cutting edge without removing too much material.
- Match the whetstone's grit to the condition of the blade — coarse grit to restore a very dull edge, fine grit to polish.
